Blueberries!

This week we visited a blueberry farm not very far from us in Ravenel SC. The farm owner is a fellow home schooler and a super busy lady. We were joined by several other familes and managed to pick nearly 18lbs of berries! It was a hot job but really fun. Some of our berries went to blueberry pancakes for dinner, 3+ quarts of freezer jam, 2 quarts for freezing to make smoothies with later and the rest will be enjoyed fresh and in yummy cobbler.  The cobbler is super easy to make and if anyone is interested the recipe is as follows:

4 cups of berries
1/4 cup orange juice
1 tblsp of corn starch
1 box yellow cake mix
12tbl of stick butter or margerine (very cold)

Preheat oven to 350 degrees
Mix berries, oj, and corn starch
Spray non stick spray in 10x13 dish
Pour 1/3 of yellow cake mix in bottom of dish
Add berry mixture to pan
Pour the remaining cake mix over the berries
Cut butter into slices (or tabs) and place evenly over the cake mix
Bake uncovered for 50 to 55min or until golden brown

We prefer to enjoy this warm with our favorite vanilla ice cream!
